BLUEBERRY-LEMON YOGURT CAKE.

I love lemon cake but this time I wanted my lemon cake to have a little kick so I added blueberries.

        List of ingredients:

·      3 eggs

·      1 cup sugar

·      2 lemon zest

·      1/3 cup of lemon juice

·      115g butter

·      1 tbsp. baking powder

·      225g low fat yogurt or Greek yogurt

·      2 cup flour

·      Blueberries  

        Procedure:

1.    In a mixing bowl. Add 3 eggs, 1 cup sugar, mix with a mixer till it’s light and fluffy.

2.    In the mixture, add 2 lemon zests, 225g of Greek yogurt, 115g of melted butter, 1 tbsp. vanilla extract, 1/3 cup of lemon juice, 2 cup of plain flour and 1 tbsp. baking powder and mix together with a mixer.

3.    Add your blueberries…as much as you want. Fold together with a spatula.

4.    Lay parchment paper in a loaf pan and add batter in the pan.

5.    Add more blueberries on the top.

6.    Bake for 50-55 mins in 180 °C oven.
