List of ingredients:
·
3 egg white
·
2 egg yolks
·
2 tbsp. coconut oil (melted)
·
1 tbsp. vanilla extract
·
200g low fat yogurt
·
200g plain flour (you can use rice flour)
·
10ml baking powder
·
Strawberries
Procedure:
1. Beat 3 egg
whites till it’s fluffy.
2. In a mixing
bowl. Add 2 egg yolks, 2tbsp. melted coconut oil, 1 tbsp. vanilla extract, 200g
low fat yogurt and mix all together.
3. In the mixture,
add 200g of plain flour and 10ml baking powder and mix.
4. Add 1/3 of egg
white and mix slowly with a mixer. Then add the remaining egg white and mix
slowly with a mixer till it’s fully mixed together.
5. Coat your loaf
pan with coconut oil. Add the batter and top it with the strawberries.
N/B you can cut the strawberries however you like but,
I cut mine into halves.
6. Bake for 30 mins in 180 °C oven.

DeleteHi! I have just discovered your blog and I love it. The pics look amazing, I would like to try to make a strawberries cake. Unfortunately, I am allergic to coconut, so I would have to change coconut oil for olive oil, here in Spain is really typical.
