I
love me a good Linzer cookie. I was inspired to make this heart shaped to
celebrate the holiday of love coming up next week.
List of ingredients:
⦁ 460g butter (firm)
⦁ 1 cup sugar
⦁ 1 tbsp. vanilla extract
⦁ 3 and half cup flour
Procedure:
1. Using a mixer bowl add your butter and beat
for 2mins using a beater.
2. Add sugar and beat for another 2mins. While
beating add vanilla extract and beat for another 1min.
3. Keep beating and add your flour gradually
till it forms a thick firm dough.
4. Transfer dough to a clean surface and form
dough into a disk like form. Wrap dough in a cling film and refrigerate for 1
hour.
5. After an hour. On a clean surface dust with
flour, and roll out the dough to 2-inch thickness.
6. Use a 2.5-inch cookie cutter (use any shape
of your choice) cut out the dough. After creating the cookie shape, use a
1-inch cookie cutter to cut out the centers from half of the cut shape (this
will be the top halves of the cookies).
7. Transfer the cookies to a baking sheets pan
covered with parchment paper, spacing about 1 inch apart.
8. Bake for 25mins in 180 °C oven.. Then place
on a cooling rack and let it cool.
9. After
cooling. Lightly sift icing sugar over the cookie tops, and spread 1 teaspoon
jam on each of the bottom halves (use any jam of your choice). Sandwich both
halves together.
Enjoy.
