RUSSIAN TEA CAKE.

I used to love these when I was living in Russia.

 Ingredients:

·      2 cups flour

·      ½ cup sugar

·      1 cup softened butter

·      1 tsp baking powder

·      ½ tsp salt

·      1 tsp vanilla extract

·      1 cup chopped almond nut ( you can use walnuts or pecans)

·      Icing sugar for dusting

 

 Procedure:

1.    In a large bowl, whisk the butter and sugar until light and fluffy.

2.    In another bowl, mix together flour, baking powder and salt.

3.    Gradually add the dry ingredients into the butter mix and whisk till combined.

4.    Fold in the chopped nuts and vanilla extract.

5.    Scoop the dough into small balls and place on a baking tray, leaving space between each ball.

6.    Bake in a preheated oven at 165° for 18-20mins or till it is lightly golden.

7.    Let them cool completely, and then coat them in icing sugar.

8.    Store the Russian tea cakes in an airtight container for up to 3 days.
